Grilled Cumin Flank Steak with Tomato Lime Salsa

There are times in my life when I feel a little more grown up…which is strange because I think you’re considered a grown up once you’re supporting yourself. So in that way, I’ve been an adult for awhile. But for me, I always feel a bit more adult like when I want to do home improvements. We’re renting right now, so I can’t go to crazy but there is an area of my place that needs some TLC. Our patio.

One Sunday, I went to Home Depot (grown up store!), World Market and H0meGoods to get some inspiration. I was on a patio mission. I didn’t even give much of a glance to kitchen stuff at World Market or HomeGoods, which is HUGE for me. I could easily loose hours of my life going through entertaining and dining stuff.

Trust me, I did wander for hours but I felt like I was getting someplace. I decided there are 3 areas I can improve our patio. We have a cast iron gate door which is rusting. It’s a total eye sore, so I want to remove the rust and paint it. Right out front of  the back door, we have a small space which would be a cute seating area. We have two cast iron chairs already, so I bought orange and white seat cushions and then I’m going to get a tourqouise stool which I’d use as a drink/end table. Then in the main patio area, we have a table and chairs. I’m looking to get a tourqouise umbrella and stand. I should look into getting cushions for those chairs but since they came with the place, it’s not a high priority.  If you follow me on Pinterest, you can see the items I’m eyeing.

In case you’re wondering where this sudden inspiration is coming from — it’s all from my grill. I spend a lot of time grilling and cooking outside. I think it would be nice to have an area where I can cook, entertain and not feel a sweaty hot pig.

Back to the idea of feeling grown up, cooking for myself used to make me feel I was more like an adult. One of the first things I made on a grill was this Grilled Cumin Flank Steak with Tomato Lime Salsa. Flank steak is a pretty cheap cut of meat and it’s really flavorful. The meat is marinaded in toasted cumin, garlic and lime juice. I love the smokey flavor of the cumin and the freshness from the lime juice. Grilling flank steak is really easy, just 5 minutes per side. The flank steak cooked to about medium and is really juicy.

After letting the meat rest, top this flank steak with a tomato lime salsa. It’s a light and pairs perfectly with the smokey flank steak! To round out this meal, serve it with some black beans & rice. It’s a sophisticated Mexican meal at home!

Whenever I make this Grilled Cumin Flank Steak with Tomato Lime Salsa, it always makes me smile. I can’t believe I used to think making dinner for myself was such a big deal. Cooking is more than just some hobby to me now; it’s a huge part of my life. But one thing that’s still the same to me is how I have to be excited about what I eat. This flank steak recipe still does that for me. I’m sure you will love this easy and tasty recipe, too!

Grilled Cumin Flank Steak with Tomato Lime Salsa

Ingredients

  • 2 tablespoons ground cumin
  • 3 cloves garlic, minced
  • 3 tablespoons lime juice
  • 1 teaspoon coarsely ground black pepper
  • 3/4 teaspoon salt
  • 1 beef flank steak or top round steak (1 1/4 pounds), trimmed of all visible fat
  • 1 large tomato, finely chopped
  • 1 can (4 1/2 ounces) chopped mild green chiles, drained
  • 3 scallions, thinly sliced

Instructions

  1. Spray grill with cooking spray. Preheat the grill.
  2. Place the cumin in a small skillet over medium heat and cook, stirring, for 3 minutes, or until fragrant and darker in color. Place in a small bowl and let cool.
  3. Remove 1 teaspoon toasted cumin and place in a medium bowl. To the small bowl, add the garlic, 2 tablespoons of the lime juice, the black pepper, and 1/2 teaspoon of the salt and mix well. Place the steak on the prepared rack and rub the cumin mixture over both sides of the steak. Let stand at room temperature.
  4. In the medium bowl with the reserved cumin, combine the tomato, chiles, scallions, the remaining 1 tablespoon lime juice, and the remaining 1/4 teaspoon salt. Let stand at room temperature.
  5. Grill steak for 5 minutes per side, or until a thermometer inserted in the center registers to at least 145°F for medium-rare.
  6. Place the steak on a cutting board and let stand for 5 minutes. Cut the steak into thin slices and serve with the salsa. Black beans and rice make a nice side item.

Follow Friday: Back For Seconds

#FollowFriday is one of my favorite posts to share with all of you! I really enjoying finding great blogs. There are so many creative people out there and it’s so fun to connect with others who share the same passions.

I’ve been holding out on all of you. I’ve been crushing on Back for Seconds for, like, 4 months. Stephanie is amazing! She develops recipes and takes amazing pictures. I’m not sure how she finds the time to delight us with sweet treats; Stephanie has twin boys and a little girl. Not to mention a hair stylist and makes jewelry. She’s the ultimate girly girl, a Mom, a wife and lover of anything with glitter.

I’m going to assume you’ve thrown in the towel on your healthy eating resolution and you’re ready to swap out a boring salad for some delicious treats. Follow Friday : Southern Pink Lemonade

Happy Friday! How was your Thanksgiving? I started off my day with a 4 mile run, cooked in the afternoon and watched a lot of football. It was the perfect day!

I’m happy you’ve come by to see who is my featured #FollowFriday Blogger. This week, we have Heather from Southern Pink Lemonade. I’ve always said, I’m easily distracted by yummy looking food photos. Southern Pink Lemonade caught my eye right away. Heather takes awesome pictures! Drool-worthy is an under statement.

Heather lives in the Midwest, but she’s a southern girl at heart. She’s a big Alabama Football Fan, which also caught my attention. There has been a lot of chatter about the BCS National Championship game — could we have a Notre Dame vs.  Alabama match up?? If this happens, I think there may need to be some kind of sweet exchange between me & Heather….just throwing out some ideas :)

Thanksgiving Tip – Compound Butter Recipes

I have a last-minute tip for all of you getting ready for Thanksgiving. Will you be having some kind of bread served with dinner? Make a compound butter. Compound meaning add some ingredients to a stick of butter. It’s really easy and delicious!

Here are the steps.

  1. Mix a soften stick of butter with your favorite ingredients. (This can be done with a spatula or with a hand mixer.)
  2. Spoon butter mixture onto parchment paper or plastic wrap.
  3. Roll into a tight log. Tie the excess plastic wrap at the ends of the cylinder into a knot, or just use little pieces of string to tie off the ends.Chill for 2 hours before serving.

Making compound butter is something you can do before Thanksgiving day. Leftovers can be stored in the freezer and used at a later date. I LOVE flavored butter. It’s something that adds an extra touch and a little elegance. (and with little effort!) Below are some of my favorite flavor combinations.

  • Honey Butter – 1 stick of butter, 1/4 cup honey
  • Maître d’Hôtel Butter (recipe used at steak house restaurants) – 1 stick of butter, 2 tbsp chopped parsley, 2 tsp lemon juice
  • Breakfast Butter – 1 stick of butter, 1 tsp brown sugar, splash of vanilla extract, chopped toasted pecans
  • Fresh Herb Butter – 1 stick of butter, 2 tbsp chopped chives, 1 tbsp chopped thyme

Taste butter and add a little salt & pepper if needed.

Crock Pot Meal: Sesame Chicken & Mushroom Cilantro Rice

I started thinking about dinner by 8am on Tuesday. Don’t judge me. I was up at 4am to get to a client by 5am. (I know, it’s early but its the life in produce.) I’m usually thinking about dinner a couple of hours after being awake, so I guess my early morning thoughts weren’t that strange after all.

I stumbled across a new blog today. I saw a posting on Facebook about a new avocado slicer. Being intrigued by any kind of kitchen gadget, I found myself on Very Culinary. After making a mental note of  “I NEED that avocado slicer,” I surfed through some of Amy’s recipes. She had so many delicious looking posts. I probably drooled a couple of times.

There was a post on Very Culinary I kept coming back to… Crock Pot Sesame Chicken.  I’m always looking to use my crock pot, it does the work for me. I had almost all of the ingredients on hand and by adding vegetables, I could stretch out this meal for a few days.

Another reason why I loved this recipe – I was done with dinner and clean up by 6:30. That NEVER happens! I love making a great a meal, but nothing is a bigger drag than having to clean up. This recipe will not turn your kitchen into a disaster zone. All I used was my crock pot, a pot to cook the rice and a cutting board. Between the time I saved my using my crock pot and 5 minute clean up, I felt like I had my whole evening ahead me. It’s a good feeling.

Ok, so if you have left overs of this meal, I think it would make an excellent wrap! There are a lot of places in Chicago which specialize in Asian Style Chicken and making wraps. You can do this, too. All you need is a large tortilla wrap, cabbage and your sesame chicken & rice left overs. It’s like a whole new meal and requires no effort. Love that!

Crock Pot Sesame Chicken & Mushroom Cilantro Rice, serves 4

(inspired by Very Culinary)

  • 5 boneless, skinless chicken thighs (about 1 1/2 pounds)
  • salt and pepper
  • 1 cup honey
  • 1/2 cup soy sauce (I used low sodium)
  • 1/2 cup diced onion
  • 1/4 cup ketchup
  • 2 tablespoons vegetable oil or olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon Sriracha (optional)
  • 1 teaspoon lime juice
  • 4 teaspoons cornstarch dissolved in 6 Tablespoons water
  • 2 carrots, sliced in rounds
  • 1 cup broccoli florets
  • 1 green pepper, sliced
  • 1/2 tablespoon (or more) sesame seeds
  • 3 scallions, chopped
  • cilantro, for garnish
  • Mushroom & Cilantro Rice (recipe follows)

Directions:

  1. Lightly season both sides of chicken with salt and pepper, put into crock pot.
  2. In a medium bowl, combine honey, soy sauce, onion, ketchup, oil, garlic, pepper flakes, Sriracha (if using) and lime juice. Pour over chicken. Cook on low for 3 to 4 hours.
  3. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Add veggies. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
  4. Shred chicken into bite size pieces. Then in individual bowls, place chicken pieces over cooked rice and spoon some sauce on top. Sprinkle with sesame seeds, chopped scallions and cilantro.

Mushroom & Cilantro Rice

  • 2 cups chicken stock
  • 2 cups instant brown rice
  • 1 cup sliced mushrooms
  • 3 tablespoons chopped cilantro

Directions:

  1. Bring stock to a boil. Add rice, mushrooms and cilantro. When the rice mixture starts to boil again, reduce heat to a simmer and cover. Cook for 10 minutes or until all of the liquid has disappeared. Fluff with fork before serving.
