Memorial Day is the official kick  off to summer. Kids are getting out of school. Vacation plans are becoming realities. Every weekend is booked with get togethers with your friends and family. If you’re like me, I need a good variety of of amazing recipes. I’m the type of girl who could never show up to a party with a recipe I’ve already shared in the past. I came up with an easy dessert which would be a hit anytime of the year…but I love it since it’s a summer cobbler and no oven is required. This easy treat can me made in the crock pot.

I try not use my oven once the weather is in summer mode. I hate how hot it makes our place and even standing in the  kitchen makes me sweat. YUCK! Being able to make a cobbler in a slow cooker is a godsend on a hot summer day! And this Red, White & Blue Crock Pot Cobbler would be an easy option for picnic or cook out. It’s easy to assemble, loaded with fruit and can be cooked in just 2 hours with no effort. It even has a crispy cobbler topping. (that’s the best part about a cobbler, right??!!)

Easy Dessert: Red, White & Blue Crock Pot Cobbler

Ingredients

    For the topping:
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 pinch salt
  • 1/2 cup butter, cut into pieces
  • 1 cup chopped pecans
  • For the cobbler:
  • 1/3 cup white sugar, or to taste
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 4 apples - peeled, cored and chopped (I used 2 Gala and 2 Granny Smith)
  • 2 cups of frozen mixed berries (I used cherries and blueberries)
  • 2 tablespoons lemon juice
  • Garnish with ice cream or frozen yogurt

Instructions

  1. For the topping - Mix flour, brown sugar, 1/2 cup of white sugar, 1/2 teaspoon cinnamon, nutmeg, and salt together in a bowl. Combine butter with the flour mixture using fingers or a fork until coarse crumbs form. Stir in pecans and set aside.
  2. Whisk together 1/3 cup sugar, cornstarch, ginger, and 1/2 teaspoon cinnamon. Place the apples in a slow cooker, stir in the cornstarch mixture; toss with lemon juice. Sprinkle the pecan crumb topping on top. Cover and cook on High for 2 hours or Low for 4 hours, until apples are tender. Partially uncover the slow cooker to allow the topping to harden, about 1 hour. Serve with ice cream or frozen yogurt.

Slow Cooked Ginger & Soy Beef Short Ribs

Isn’t it great when you can have an amazing home cooked meal with very little effort?? And it’s even better when the recipe is comforting. I made beef short ribs in a slow cooker and I loved it. It was the perfect meal after a busy day.

Most times, cooking short ribs means lots of oven time…sometimes up to 4 hours. I don’t know about you, but I certainly don’t have time for that! Short Ribs are very dense and when they’re cooked just right, it’s the most fork tender rib you’ll ever find. Seriously, when I was ready to eat these Ginger & Soy Beef Short Ribs, I didn’t need a knife. Just by digging in with a fork, the meat tore apart.

The marinade are mostly pantry items, including soy sauce, beef broth, brown sugar, garlic and ginger. I added a few spices, like coriander (which you could use cilantro if you don’t want to buy a new spice) and Chinese five spice (again, if you don’t have it – you can use fennel seed or omit it). It’s cooked for 5 hours with the short ribs and then strained and simmered until only half of the liquid remains. It will be a thin sauce that’s perfect to drizzle over the short ribs and 90 second rice.

It’s recipes like this this one make me really happy! I loved how easy it was to prepare such a fancy meal. And the short ribs were amazingly tender and the sauce had a lot of zing from the ginger. And of course, the 90 second microwavable rice guaranteed I didn’t have to scrape a pot of burnt rice. :)  I hope you’ll like it too!

Slow Cooked Ginger & Soy Beef Short Ribs

Ingredients

  • 8 short ribs
  • Salt & Pepper
  • 2 tsp sesame oil
  • 1 cup beef broth
  • 2 tbsp low sodium soy sauce
  • 2 tbsp balsamic vinegar
  • 1 inch ginger, peeled and sliced
  • 2 garlic cloves, smashed
  • 1 tsp dried coriander (or cilantro)
  • 1 tsp Chinese 5 spice (or dried fennel)
  • 2 tbsp brown sugar
  • 2 packages of 90 second brown rice
  • Green onions, for garnish

Instructions

  1. Take the 8 short ribs and sprinkle with salt & pepper. In a warm skillet, add sesame oil. Brown short ribs on the meaty side. In the slow cooker, mix together the rest of the ingredients (expect rice & green onions.) Place short ribs in the slow cooker, meaty side down. Cook on low for 6 hours.
  2. When the ribs are fork tender, remove from the slow cooker. Strain liquid in the slow cooker into a sauce pan. Boil 5 to 10 minutes or until reduced by about half.
  3. Microwave rice according to directions (usually 90 seconds!). Serve under short ribs with sauce and green onions.

So this easy recipe, Crock Pot Meatballs with Peach Chipotle BBQ Sauce, was inspired by one of my favorite obsessions. Chips and salsa. If you looked inside my fridge at this moment, you’d see at least 3 different salsa jars. I have a serious problem which I don’t care to kick. I LOVE salsa. One of the jars I recently devoured was a mango chipotle salsa. It was perfectly spicy but with a kick of sweetness. That salsa barely lasted a day in my house. It was so good.

Unlike me, my husband won’t eat just chips and salsa for dinner. So I started brainstorming the ways I could bring the sweet and spicy kick from the salsa into an actual meal.

BBQ Sauce has a lot of the same ingredients as salsa, it’s just handled a little bit differently. By adding some peach preserves and chipotle peppers to a standard BBQ sauce, I’d be able to recreate the taste from the salsa. And meatballs make my husband happy, so that was a no brainer. But to make things easier for me, I decided to brown the meatballs in a skillet and then cook them in a slow cooker.

The meatballs are made with ground turkey and pork, so they’re healthier than the average ground beef meatball. The BBQ sauce is made from scratch, so there aren’t any preservatives or ingredients you can’t pronounce in it. Plus, you can totally make the BBQ sauce your own by adding your favorite kind of jelly. I picked peach because I had some on hand.

Crock Pot Meatball Sliders with Peach Chipotle BBQ Sauce

Ingredients

    For the meatballs:
  • 1 lb ground pork
  • 1 lb ground turkey
  • 1 egg
  • 3/4 cup panko bread crumbs
  • 1.5 tsp cumin
  • 1.5 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp extra virgin olive oil
  • 1/4 cup beer or broth
  • For the Peach Chipotle BBQ Sauce
  • 1 tbsp extra virgin olive oil
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 1/4 cup peppers and sauce from canned chipotles in adobo, minced
  • 2/3 cup ketchup
  • 1/4 - 1/2 cup beer or broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp molasses
  • 1/2 cup peach preserves
  • Salt, to taste
  • Slider Buns/Rolls

Instructions

  1. For the meatballs: In a large bowl, add the first 10 ingredients and mix with your hands. Once the ingredients are combined, shape into meatballs. You can use a medium sized cookie scooper or 2 tablespoons would work. Add olive oil to a large skillet at medium heat. Brown meatballs on all sides, do not over cook. You just want to give the meatball a nice sear. Cook meatballs in batches - don't over crowd the skillet. Add cooked meatballs to a slow cooker coated with cooking spray. Once all of the meatballs are in the slow cooker, pour in beer or broth. Cook on low for 5 to 6 hours.
  2. For the sauce: In a sauce pan set at medium heat, add oil & onions. Cook until the onions are translucent. Add garlic and stir. Cook until fragrant. Add chipotle peppers and sauce. Stir until combined with onion & garlic. Stir in the ketchup, vinegar, water, mustard, molasses, and peach preserves. Simmer for 10-15 minutes. Taste and add salt if needed.
  3. Once the meatballs are cooked, remove from slow cooker. Drain out the liquid. Return meatballs to slow cooker and cover with BBQ sauce. Turn slow cooker setting to warm and cover with lid. Let the meatballs sit in the slow cooker for at least 10 minutes. Serve BBQ meatballs on slider rolls.

You’re in luck. All week I’ll be sharing St. Patrick’s Day inspired recipes! Today’s recipe is a twist on everyone’s favorite – Corned Beef & Guinness. And I’m not talking about a plate of corned beef with a pint of Guinness. We’re cooking both together in a crock pot.

This recipe is super easy (especially since the slow cooker is involved!) and I’m guessing you have a majority of the ingredients already on hand. For the Irish inspired meal, the pantry items you’ll need are brown sugar, apple cider vinegar, Dijon mustard, bay leaves and garlic. At the grocery store, be sure to pick up corned beef, 1 bottle of Guinness, baby red potatoes, and baby carrots.

I picked Guinness Extra Stout (it was the only 1 bottle option available) and it’s a very dark beer with a complex spicy aroma. It’s smooth and well balanced. To get the most flavor possible and to tenderize the meat, some kind of acid needed to be added to the marinade. Apple cider vinegar & Dijon mustard are just perfect for this recipe. You can slightly taste (and smell) the apple and many people like their corned beef with Dijon mustard.. so why not add it to the cooking marinade. The best part about the marinade — it becomes the gravy! It’s delicious!

Like any good Irish girl would say, you need your potatoes! I love small red potatoes. You don’t have to take the time to cut them up, just throw them in the crock pot when the meat is half way done cooking. I added carrots during the last hour of cooking. I like carrots to still have a little snap in them.

Slow Cooked Corned Beef with Guinness Gravy

Ingredients

  • 2-3lb Corned Beef
  • 1 cup Guinness
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 garlic cloves, mined
  • 1 tbsp Dijon Mustard
  • A few bay leaves
  • Pepper
  • 3lb Red potatoes, (baby/small size)
  • 16 oz baby carrots
  • 3 tbsp butter
  • 3 tbsp flour

Instructions

  1. 1. Place corned beef in a slow cooker coated with cooking spray. In a small bowl, make the marinade. Combine beer and the next 5 ingredients. Stir with a whisk until well combined. Pour over corned beef. Season corned beef with pepper. Cook on low for 8 hours.
  2. 2. Half way into cooking, add potatoes. With one hour left, add carrots.
  3. 3. When the meat has finished cooking, remove from slow cooker and place on a plate; wrap it in foil to let the meat rest for 10 minutes. Cut meat against the grain. Remove potatoes & carrots; set aside in a large bowl. Strain cooking marinade. Set aside to make gravy.
  4. 4. In a medium sauce pot, add butter and flour. Stir until the mixture is a light brown color. add cooking marinade. Stir and bring to a boil. Reduce to a simmer and cook for 5 minutes. Serve over corned beef, potatoes & carrots.

Happy Monday! How was everyone’s weekend??

I was happy to see the return of Shamrock yumminess.

On Saturday morning, I took my first spin class in like 10 years. Can someone PLEASE tell me why do they make the most uncomfortable seats for spin bikes??! I mean, it took me a good 20 minutes to get over the fact how much pain my hiney was in. I looked around the class to see if anyone had any remedies, like a seat pad or a towel, and no one did. Looks like I have a wimpy butt.

And then on Saturday night, my car battery died when we went to pick up take out pizza…Oh, and I parked illegally in a tow zone. Luckily we have AAA — but it was going to be a 90 minute wait. So the hubby & I ate pizza in the car and then went into Forever Yogurt to wait for the AAA guy to come save us. I was happy to eat this while we waited and people watched…and prayed not to get a parking ticket.

I’m happy to report Sunday was a drama free day. We went out for brunch, wandered aimlessly through the hardware store and sat on the couch judging other Big 10 basketball teams. (“other” meaning all teams except Indiana. :) )

My favorite part about Sunday is dinner. Growing up, we would always have a home cooked meal on Sunday nights. It was usually something meaty – like hamburgers, meatloaf or steaks. These days, I still love staying in and making a hearty dinner. It’s way better than sorting through take out menus at 6pm trying to figure out what to eat.

A Sunday meal doesn’t get any easier than this – (5 Ingredient) Slow Cooker Ranch Seasoned Beef. It would be great to eat like a pot roast with some potatoes or you can shred the beef and serve it as a sandwich. I decided to go the sandwich route…mainly because I wanted to top it with cheese. YUM!

The marinade for the beef is super easy and you probably have all of the ingredients in your pantry. To make this slow cooker meal, all you need is an onion, distilled white vinegar, a Hidden Valley Ranch Packet & 2 garlic cloves. Mix everything together and pour over the beef. Cook on low for 8 hours.

I loved how flavorful this beef tasted! The vinegar helps to break down the meat to make it tender and gives the beef some tang. And of course, Hidden Valley Ranch seasoning is the best thing ever invented. I decided to use the seasoning packet to cook with the beef so every bite was infused with a ranch kick!

Since this meal is so easy, it would also be a great week night meal! Just put everything in the slow cooker before heading off to work and when you’re home, dinner is ready.

I like my Sunday’s to be pretty effortless, and that includes making dinner. I wish all of my meals only required 5 ingredients!

(5 Ingredient) Slow Cooker Ranch Seasoned Beef

Ingredients

  • Cooking Spray
  • 1 Onion, sliced
  • 3lb Chuck Pot Roast, Boneless & seasoned with Salt & Pepper
  • 1/3 cup Distilled White Vinegar
  • 1 Hidden Valley Ranch Packet (1.0 oz)
  • 2 Garlic Cloves, minced
  • 1 tbsp water
  • 6 French Rolls, sandwich size (optional)
  • 6 slices of Mozzarella (optional)

Instructions

  1. Spray crock pot with cooking spray. Add sliced onions and place beef on top. Mix vinegar, ranch packet, garlic and water. Stir and pour over beef. Cook on low for 8 hours.
  2. To make sandwiches - shred beef and place in french rolls. Add cheese on top of beef. Broil in the oven until cheese is melted.

I only post recipes I love. And in this case I really really LOVE LOVE LOVE LOVE this pork recipe. There isn’t much to it. Excluding the pork, all of the ingredients I had on hand and you should too.

I’ve made it pretty clear how much I love using my crock pot. It makes my life so much easier. I like to put the meal together the night before so it hangs out in the fridge over night. In the morning after I walk the dog and make my coffee, it’s time to grab the crock pot and turn it on. I’m out of the house for the day but dinner will be ready when I get home.

The first thing I do when I come home from work is take a deep breath — the smell coming from the crock pot fills the whole house. When I walked in on Tuesday, I was happily overwhelmed by the smell of brown sugar pork. I ran to the kitchen and took a little bite. I seriously almost melted. The pork was so tender! And the sauce, oh my… it’s a combination of brown sugar, balsamic vinegar and Dijon mustard. All pantry items and it made the most divine tasting sauce. It’s sweet with a touch of acidity. Perfection!

To round out the meal, I whipped up some sweet potato mash. It’s super easy — peel and dice a couple sweet potatoes, boil for 15 minutes and drain, add some butter and brown sugar and skim milk, mash until you get the right consistency. This was an easy week night meal, but I’d make this any day of the week! It’s a great recipe to use if you have guests coming over for the holidays. It makes a lot and leftovers taste better the next day.

I really wanted to name this recipe “OMG Pork.” It’s all I could say when I was eating it. I hope you’ll love love love it as much as me.

  • 4 lb pork loin (or your favorite cut of pork for a crock pot)
  • Salt & Pepper
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1.5 cups brown sugar
  • 2-3 tbsp Dijon mustard
  • 2 tbsp balsamic vinegar
  • Equal part cornstarch and cold water (slurry)

Directions

  1. Remove excess fat from pork. Using a fork, stab/make holes through out the pork. Season with salt & pepper. Spray crock pot with cooking spray and add onions. Place pork on top.
  2. In a bowl, combine garlic, brown sugar, mustard and vinegar. It will be a paste like consistency. Spread all over pork. Cook on low for 8 hours.
  3. When the pork is done cooking, take out of the slow cooker and let it rest for 10 minutes. (cover pork with foil) Strain the liquid in the slow cooker into a sauce pan. Save onions. On a medium heat, cook and stir in slurry. The slurry will thicken up the sauce. You may need to repeat this step a few times to get the consistency you want.
  4. Place onions on top of pork and cut into pieces. Serve with sauce drizzled on pork pieces.

Crock Pot Tacos al Pastor

Tacos al Pastor is by far my favorite type of taco. Sadly, I didn’t know about this delicious tasting taco until a year and a half ago. While I was in culinary school, I had a Taste of Mexico class. It was taught by one of the best Mexican Chef’s in Chicago, Chef Carlos Gaytan. He LOVES Tacos al Pastor, so he was excited to share with the class his recipe. My team of 3 made his recipe, and when it came to taste test time, I was completely blown away. The pork was so spicy and tender, however, there was a lot of sweetness from the pineapple. If I could fall in love with a taco, this would be the one.

If you’re like me and you don’t have the time to tend to roasting pork for hours, I offer you a cheat method to make Tacos al Pastor in your home. Get out that crock pot and put it to work for you. I cooked a pork tenderloin in a slow cooker for 6 hours on low and when it was time for dinner, I couldn’t believe how flavorful this recipe came out. Sometimes cheating does win :)

Crock Pot Tacos al Pastor

  • 1 onion, sliced
  • 2 lb pork tenderloin
  • 4 cloves garlic, minced
  • 1 20oz can crushed pineapple, with juice
  • Chipotle peppers in Adobo, up to 6 whole peppers
  • 1.5 tbsp apple cider vinegar
  • 1/2 cup orange juice
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 cup chopped pineapple
  • 1/4 cup chopped cilantro
  • 1/2 cup chopped onion
  • 1 lime, juices
  • Corn tortillas

Directions:

  1. Place the first 11 ingredients in the slow cooker. Cook for 6 to 8 hours on low. Please note, you can go easy on the chipotle peppers if you aren’t into spice. They do pack a lot of punch, so if you want a hint of spice, you can put in 2 or 3 and still get the flavor. Do not chop them up, just put the peppers in whole so you can fish them out.
  2. Shred pork in the slow cooker. Combine the chopped pineapple, cilantro, onions and lime juice to make salsa. Warm the tortillas. On the tortilla, put the shredded pork and top with salsa.
