Have you picked a team to win the Super Bowl? Personally, I like both teams. I love the color combo of both teams. I like both cities. { Those are my girly comments. } Both teams have an exciting offense and they deserve to be in the Super Bowl. But if I’m forced to pick, I’ll be cheering for the Broncos. I’ve grown to forgive Peyton for beating my Bears in the 2006 Super Bowl. I’d love for him to show all of the haters that he’s still got it. And I think Eric Decker is super cute! Aaaaand I really like the Bronco’s cheerleader uniforms. { Back to my girly comments. }

In honor of the Broncos, I wanted to re-create my favorite treat from the Rocky Mountain Chocolate Factory. They have locations all over the US and I grew up eating their chocolate. I always have a hard time of picking one item, so that’s why I love these Avalanche Bars. It’s pretty much the kitchen sink of goodness in bar form. It’s like a white chocolate peanut butter rice krispies treat with chocolate chips. YUM! And since I love a little salt in my desserts, I added hickory roasted almonds. It’s not required, but if you want some additional crunch, I highly recommend it!

Rocky Mountain Chocolate Factory Avalanche Bars are just what you need on a day when you want a little bit of everything. Get your sweet, salty, crunchy and creamy fix all in one bite!

Rocky Mountain Chocolate Factory Avalanche Bars

Ingredients

  • 1 (12 oz) bag white chocolate chips
  • 1/2 cup natural peanut butter
  • 1.5 cups Rice Krispies
  • 1.5 cups mini marshmallows
  • 1/2 cup mini chocolate chips
  • 1/2 cup hickory roasted almonds, roughly chopped (optional)

Instructions

  1. Add white chocolate chips and peanut butter to a bowl. Place in the microwave for 30-second increments, stirring after each, until completely melted. Add rice krispies and stir until well combined. Let the mixture cool to room temperature but still stir occasionally.
  2. While the mixture if cooling, line an 8x8 baking dish with parchment paper.
  3. Once cool, add marshmallows, chocolate chips and almonds (if using) to the mixture. Stir until well combined and pour into the baking dish. Be sure to evenly distribute the mixture in the dish, press with your hands to create a flat surface. Place in the fridge for 30 minutes or until set. Remove bars and cut into squares. Store in an airtight container in the refrigerator.
