I saw on twitter or while picture stalking on Instagram a good quote. “Summer bodies are made in the winter.” It’s so true! Living in the Midwest, it’s super cold for months and then one day in May, it turns warm. In the past, on the first warm day I’m so excited to whip on some summer clothes… only to find I’ve put on a little bit of winter weight. I swear off all bad foods and booze until my clothes fit…. only to totally forget about my promise once the weekend rolls around and I’m eating & drinking at a street festival. And the next morning, I pledge to get my butt back into shape. Which only keeps me in check until someone says, “Happy hour! At a roof top bar!” I’m easily distracted by shiny things and roof tops.

What I’m trying to say is it’s hard to think about summer clothes when you’re constantly wearing sweatshirts & eating comfort foods. Since the fall, I’ve been making an consistent effort to cut back on bad carbs and sugar. I did pretty well up until the holidays. I’ve been getting back into my healthy eating habits since the new year, but I’m still craving those comfort meals on cold nights.

Burgers are the ultimate comfort food. I love a squishy bun, gooey cheese and an endless amount of condiments & toppings. But let’s be honest, the typical burger is not going to get you a summer body. I refuse to give up the foods I love, so I got creative and made a Low Carb Mexican Chicken Burger as an option for my burger craving.

This easy & healthy recipe will come together in less than 30 minutes. By replacing the bun with an oven roasted portobello, you’re eliminating unhealthy carbohydrates. Pick a lean ground meat, like chicken or turkey for your burger. You’ll save a ton of fat and calories! But don’t worry, your burger will still be super tasty. I flavored the ground chicken with my favorite Mexican seasoning mix and it gave the burger a spicy kick. And let’s not forget about the condiments — I picked a light spreadable cheese from Laughing Cow, pre-made guacamole and pico de gallo. This low carb burger is totally loaded but with no guilt!

Low Carb Mexican Chicken Burgers

Ingredients

  • 4 large portobellos, cleaned and stem & gills removed
  • Extra virgin olive oil
  • Salt & Pepper
  • 1 lb ground chicken (or turkey)
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp garlic
  • 2 tsp paprika
  • 1 tsp salt
  • Pre-made guacamole
  • 4 servings of Light Laughing Cow Cheese, Queso Fresco & Chipotle flavor
  • Pre-made pico de gallo

Instructions

  1. Pre-heat oven to 425 degrees. Rub oil into each mushroom on both sides. Season with salt and pepper. Bake in the oven for 12 minutes in a baking dish. Remove mushrooms from the dish and place on a paper towel lined plate. Remove excess moisture. Set aside.
  2. In a large bowl, add ground chicken and seasoning. Mix with your hands. Form into 4 patties. In a cast iron skillet, pour a little oil and cook the patties until the internal temperature is 160 degrees. { Takes about 10 minutes or so. }
  3. Turn off heat and spread cheese over the burgers. Place a lid on the skillet for 3 minutes. During this time, spread guacamole in the underside of the portobello. Remove burger from the skillet and place on top of the portobello & guac. Top burger with pico de gallo. You'll need your utensils to eat this burger!
