If I had a quarter for every time I heard, “IT’S SO COLD!!!!!!” this week, I’d totally have enough money to book a luxury vacation to Hawaii. I’ve totally said that phrase at least 100 times since Sunday…. b/c it’s.so.cold. Chicago has even gotten a new nickname during the polar vortex — Chiberia. (Try searching the hashtag on twitter or instagram. It’s amazing!)

Monday morning, we managed to get the car out on the road and get things from the grocery store. I stocked up knowing this might be the only chance I would get for the next few days. Making 5 Alarm Beef Chili was totally on my agenda. Chili is the perfect meal for a cold day and the BCS game would be on (while The Bachelor was on commercial breaks).

I love all kinds of chili but I always go a little nuts for a spicy chili recipe. I love the kick and a slow burn. 5 Alarm Beef Chili has tons of spice! This is definitely more for a meat lovers recipe. There are very little beans and veggies compared to the amount of beef in this recipe. Top this chili with your favorite toppings, use it for nachos or even in eggs! It’s a very versatile recipe, so put those leftovers to good use.

5 Alarm Beef Chili totally made me forget about living in Antarctica   Chicago.  I was so happy being curled up on the couch and eating a bowl of spicy chili. This is the kind of recipe I’ll be making for the upcoming NFL playoff games and well into the winter months.

5 Alarm Beef Chili


  • 2 lbs ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 large green pepper, diced
  • 3 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tbsp oregano
  • 1 tbsp paprika
  • 1-4 tsp cayenne { This depends on your love of spice. Go easy, taste and add more if needed. Remember, the chili gets hotter the longer it sits. Even in the fridge!}
  • 1 tsp salt
  • 6 oz tomato paste
  • 8 oz no salt added tomato sauce
  • 1 (28 oz) can stewed tomatoes (undrained)
  • 1 (15 oz) can dark red kidney beans, drained and rinses
  • 1 cup beef stock
  • Toppings - shredded cheese, sour cream, Greek yogurt, green onions, chips, crackers, etc.


  1. Brown ground beef over medium heat in a dutch oven. Add onions,garlic and green pepper. Continue to cook until the meat is completely browned and the vegetables are tender. Remove any excess liquid from the pot. (I use a shallow spoon and usually get about a cup of liquid.)
  2. Stir in all of the seasonings. Taste meat, add more cayenne pepper if needed. Add tomato paste, work it into the meat. Add tomato sauce, stewed tomatoes and beans. Stir until well combined. Add stock. Bring to a boil. Cover pot and simmer for atleast 30 minutes. Add water to chili if you need more liquid. Taste chili, add any additional seasonings or salt. Serve with your favorite chili toppings.

    It was totally cold here in Texas too which is crazy, 21 degrees is too cold for a southern state! I moved AWAY from that! :) But at least I can make this chili to warm up. I’m all about chili with some heat and this sounds perfect! Thanks Meghan!
