Oven Roasted Brussels Spouts, Red Grapes and Bacon is one of my favorite Thanksgiving side dishes! It’s the perfect combination of sweet, salty and savory.

I grew up eating vegetables… a lot… like almost everyday for lunch. There was nothing easier than warming up a bag of frozen veggies and watching daytime soaps with my Mom. Of course, I would drench those vegetables in French dressing, but I was a kid and not counting calories.

Then I grew up and met a guy who didn’t have the same kind of love for vegetables as I did. Before I started cooking for him on a regular basis, he told me that he eats the least favorite thing on his plate first and saves the good stuff for last. I took notice when he ate his veggies so fast like someone was going to steal them off of his plate. Honestly, I was kind of offended he didn’t like part of a meal I would prepare for us.

One night I told him I was making Brussels sprouts and he looked at me like I was crazy… or maybe it was a face like, “I’m NOT eating that.” But I didn’t give him a choice… and I also bribed him by adding bacon to the mix.

Verdict – Bacon makes everything better. Not only did he eat all of the Brussels sprouts (and bacon), it wasn’t the first thing gone from his plate. So this year for Thanksgiving, I’m changing up the typical Brussels sprouts and bacon recipe buy adding one more special ingredient. Red Grapes!! {Don’t you look at me like I’m crazy.} Roasting red grapes makes them super sweet. It’s really complements the saltiness of the bacon and savory sprouts. This is a Thanksgiving side that required almost no effort to prepare and takes only 25 minutes to cook.

Oven Roasted Brussels Sprouts, Red Grapes and Bacon

Ingredients

  • 12 oz Brussels Sprouts, halved
  • 1 cup Red Grapes
  • 2 garlic cloves, minced
  • 5 bacon strips, cut into pieces (get a smokey option!!)
  • 2 tbsp Oil (I like Star Butter Oil)
  • 5 sprigs of thyme, leaves removed
  • Pepper

Instructions

  1. Set oven to 375 degrees.
  2. On a baking sheet lined with parchment paper, mix all of the ingredients with your hands. Make sure all of the Brussels sprouts are cut side down. Roast for 25 minutes. Do not add any salt to this dish until you taste it!! Bacon tends to be on the salty side, so you probably won't need it.
