I’m pretty lucky to work from home every day, doing a job I’m 100% happy doing. Not that many people can say that. And one would think when you work from home, you would magically have all of this extra time to get house things done… my home would always be clean, things would always be put away, no dishes in the sink. This is NOT the case for me.

It drives me crazy. It seems as soon as I clean our place, a tornado comes through our house and everything is back to messy. I’m totally aware it’s my fault. I hate putting clean clothes away. It takes me days to unpack from a vacation. I hate unloading the dishwasher. I’d rather do just about anything than refill an ice cube tray.

Until the day comes when I have some one who follows me around to clean up my messes (I could only wish this would happen!), I need to make the effort to clean up after myself in that exact moment instead of letting things pile up. If anyone has any tips on how to do this, I’d greatly appreciate it. :)

Working from home keeps me busy all day… and many times I’m working well into the night.  On the days when I know I’m going to be super busy, I plan ahead and create a slow cooker recipe. This Slow Cooker Pork and Stuffing recipe is totally comforting! It’s filled with sweet potatoes, carrots, green beans and pork. Then during the last 15 minutes of cooking, add corn bread stuffing on the top.

Slow Cooker Pork and Stuffing is a the type of meal you should make during the busy school year, a crazy work day or when you’re feeling lazy and don’t want to put the effort into a big meal.

Slow Cooker Pork and Stuffing

Ingredients

  • Cooking Spray
  • 1 sweet potato, diced
  • 1/2 lb baby carrots
  • 2 lb pork, cubed
  • Salt & Pepper
  • 1 (10 oz) can reduced sodium cream of mushroom soup
  • 2 oz chicken broth
  • 1/2 envelope onion dip dry mix
  • 1 (12 oz) bag frozen green beans, thawed
  • 6 tbsp butter
  • 7 oz corn bread stuffed (make sure yours wasn't crushed like mine!!)

Instructions

  1. Coat slow cooker with cooking spray. Add sweet potatoes & carrots to slow cooker. Season pork with salt and pepper; add to the crock pot.
  2. In a small bowl, combine soup, broth and onion dip mix. Stir and pour over pork. Cook on low for 6-8 hours.
  3. Gently stir thawed green beans into pork mixture. In medium bowl, mix melted butter and stuffing; spoon over pork mixture. Increase heat setting to High; cover and cook 15 minutes longer or until stuffing is soft.

    The sweet potatoes are awesome! My slow cooker saves me so many days. Also… I am pretty sure that working from home means extra mess since we never leave. At least that’s what I’m going with. Makes perfect sense to me!
