Greek Tuna Salad

We’re just getting into the month of July and can you believe it, back to school stuff is ALREADY being promoted on TV, in retail stores and online market places. I mean, really??!! If I was kid, just thinking about summer being over in 6 weeks would give me major anxiety. The last thing I would even want to think about would be getting ready for school… well unless it meant shopping for new clothes. But besides that, I wouldn’t want to think about it.

Something many parents forget about back to school time is yourselves!! You’re getting the kids all ready for school, buying them new things, packing lunches, etc.  By the time the kids are out the door, you’re probably running some place, too….and then you get hungry….and you wonder what you want to eat….and you’ll drive to the closest place just to stop the hunger pains. We’ve all been there!

Whether you work in an office or at home, this Greek Tuna Salad is the perfect lunch! 100% of the ingredients in this salad should be kitchen staples. It’s easy and comes together in 2 minutes. I love all of the fresh veggies – sliced tomatoes, chunks of cucumber & onion, and fresh romaine lettuce. Green Tuna Salad is packed with protein! Besides using white tuna, I also added a hard boiled egg. (I LOVE eggs in salad!) And the dressing is super simple. Just some red wine vinegar, olive oil and dried oregano.

Doesn’t this Greek Tuna Salad sound easy & look delicious??!! Trust me, it totally is! It’s a go to salad for me when I’m rushed and I need a healthy lunch. Keep it in mind (or PIN IT!!) for those busy days when you’re trying to get the kids out the door for school.

Greek Tuna Salad

Ingredients

  • 1 cup romaine lettuce, torn
  • 1/2 tomato, sliced into wedges
  • 1 tbsp white onion, diced
  • 1/4 cup cucumber, chopped
  • 1/2 can white tuna packed in water
  • 1 hard boiled egg, cut in half
  • For the dressing:
  • 1 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano

Instructions

  1. In a large bowl, add all of the salad ingredients.
  2. In a small bowl, mix together the dressing ingredients.
  3. Pour dressing over salad and toss until well combined. This salad serves one person.
