Virtual Picnic – Easy Turkey Melt Sandwiches

It’s the last day of the Flavors of Summer & Virtual Picnic. Have you seen any new recipes you’ll be making for the 4th of July? There have been some amazing recipes being posted from our link party & party hosts.  Today I’m sharing a super duper easy turkey melt. It’s perfect for a picnic and healthy for you.

I’m not sure if you’re like me, but when it comes to a picnic, I load up my paper plate with a lot of food. There are so many salads, sides and desserts to try! I created a healthy turkey melt extactly for this reason. A lighter “main course” so I can fill up on everything else. :)

Here was you need – thin cut sandwich bread (Pepperidge Farm Deli Flats is a good one!), low sodium deli turkey, arugula or baby spinach, pesto sauce, thinly sliced tomatoes and part skim shredded mozzerela cheese. Assemble the sandwich and microwave it for 20-30 seconds. Eat right away or wrap each sandwich in tin foil. This will help keep the sandwich warm and the cheese gooey. It’s such an easy & tasty sandwich!

Easy Turkey Melt Sandwiches


  • Thin cut bread rolls. I like Pepperidge Farm Deli Flats.
  • 1 tbsp pesto sauce
  • 2 slices of low sodium turkey
  • 6 baby spinach or arugula leaves
  • 2 thin slices of tomato
  • 1/4 cup part skim shredded mozzarella cheese


  1. Separate the bread rolls. Spread pesto sauce on both halves of bread. Layer the turkey, spinach/arugula, tomato and cheese on one piece of bread. Place the second piece of bread on top. Microwave sandwich for 20-30 seconds. Eat right away or wrap in tin foil to keep warm. (Recipe is for 1 serving/sandwich.)

    I could eat this anytime, not jut for a picnic. It sounds so good! I LOVE pesto and put it on sandwiches whenever I have some handy. YUM

    What a great sandwich, just love that you used flat bread. Easy to bite into and you can pile more food inside.
